    Sip & Swine 2021

Our first competition in almost exactly a year wrapped up with not so hot results. Many competitions were cancelled in 2020 due to the pandemic. Our last competition was actually the Sip and Swine event of 2020. We walked on stage last year, but was not as fortunate this year. Competition was very fierce, as teams from all over the country travelled to Lawrenceville, Georgia for this event. Anxious pitmasters chopping at the bit to get back to what they love – BARBECUE! Popularity of Sip & Swine One of the few events scheduled for early 2021, the 6th Annual Sip & Swine BBQ Competition attracted teams from Texas, The…

Smokin J’s Barbeque at Doc Holiday Competition

Our second barbecue competition of the season is in the books and it was a hot one in Griffin, Georgia at the Doc Holiday BBQ and Music Festival.  The event takes place in historic downtown Griffin, home of the famous gunslinger, Doc Holiday. The annual event celebrates his life and his role in the Gunfight at the OK Corral. Food, crafts, and barbecue lined several blocks. One thing I…

Mediocore Meat at Canton BBQ & Brews

Judges said we had mediocore meat at Canton’s BBQ & Brews barbecue competition. The weekend started off great!  Traditionally, BBQ & Brews gives away a gift basket to the team who turns in their competition application first. For the THIRD TIME – IT WAS US! Filled with t-shirts, hats, pig regalia and Reformation Beer – we appreciated being recognized. We are always excited about participating in these north Georgia events, so we get our applications in, as soon as we see them appear on the GBA schedule.  Dale Wilson, owner of Pirate 50 Custom Artwork and Trophies (and creator of some of the best GBA trophies) surprised BBQ & Brews’…

Leftover Competition Pork in this Goulash Stew

A goulash is typically a stew made with some sort of protein and seasoned with spices, then cooked for an extended amount of time. Smokin J’s Barbeque keeps the trimmings off our competition meat, for the exception of the fat; bring them home and store them in the deep freezer. Recently, I found TWO, two-gallon zip lock bags in the deep freezer. Frustrated, I decided to develop my own goulash recipe and use one of those 2-gallon bags as my protein. Trim the Meat After thawing the meat, overnight in the refrigerator; I had to trim any remaining fat off the meat. It is difficult to remove ALL the fat.…

Judging in the Georgia Barbecue Association

If you like lip-licking, delicious barbecue prepared by some of the best competitive pitmasters in the country, then you should consider judging barbecue in the Georgia Barbecue Association. Smokin J’s Barbeque is not only a professional cook team in the GBA, but we are also certified judges, for the association. We learned a tremendous amount during our training, which helped elevate our cooking game.
