Successful Smokin’ Flamingo BBQ and Music Festival

Smokin J’s Barbeque spent five days at the Flamingo Lake RV Resort for the 6th Annual Smokin’ Flamingo BBQ & Music Festival.  It was a mini-vacation, for us; not just a barbecue competition. There have only been a few Georgia Barbecue sanctioned events at RV campgrounds and this was one hellva campground.  Over 285 full hook-up camping sites offering both 50 and 30 amp service, cable, sewer and water, along with 4 furnished cabins and two Yurts, provide diversified camping experiences (no tent camping allowed). Other amenities at Flamingo Lake RV Resort include free wi-fi service, laundry facilities, a general store and a large Walmart within 5 minutes of the…

Smokin J’s Barbeque at Doc Holiday Competition

Our second barbecue competition of the season is in the books and it was a hot one in Griffin, Georgia at the Doc Holiday BBQ and Music Festival.  The event takes place in historic downtown Griffin, home of the famous gunslinger, Doc Holiday.  The annual event celebrates his life and his role in the Gunfight at the OK Corral.  Complete with vintage costumes, actors portray the 30-second shootout between Doc Holiday, Wyatt Earp, town Marshal Virgil Earp, Special Policeman Morgan Earp and members of a loosely organized group of outlaws known as the Cowboys, which took place in Tombstone, Arizona. Food, crafts and barbecue lined several blocks.  One thing I especially…

Mediocre Meat at Canton BBQ & Brews

It was a tough weekend for Smokin J’s Barbecue in Canton at the BBQ & Brews Festival. The weekend started off great!  Traditionally, BBQ & Brews gives away a gift basket to the team who turns in their competition application first. For the THIRD TIME – IT WAS US! Filled with t-shirts, hats, pig regalia and Reformation Beer – we appreciated being recognized. We are always excited about participating in these north Georgia events, so we get our applications in, as soon as we see them appear on the GBA schedule.  Dale Wilson, owner of Pirate 50 Custom Artwork and Trophies (and creator of some of the best GBA trophies)…

Leftover Competition Pork in this Goulash Stew

A goulash is typically a stew made with some sort of protein and seasoned with spices, then cooked for an extended amount of time. Smokin J’s Barbeque keep the trimmings off our competition meat, for the exception of the fat; bring them home and store them in the deep freezer. Recently, I found TWO, two gallon zip lock bags in the deep freezer.  Frustrated, I decided to develop my own goulash recipe and use one of those 2-gallon bags as my protein. Trim the Meat After thawing the meat, overnight in the refrigerator; I had to trim any remaining fat off the meat.  It is difficult to remove ALL the…
