    What is a microwave-convection oven Installed frequently in recreational vehicles, it is a combination of a regular convection oven with a microwave.  Users are able to use the quick interior cooking of microwaves combined with the surface browning of hot air.  Convection cooking allows for the interior cooking of a traditional oven, just hotter and faster. Convection oven technology uses a fan to force air movement and heat up the full interior of the microwave to cook food from the inside out.     Cooking at Three Rivers Festival at Towns Bluff

    Enjoyed a beautiful weekend at Towns Bluff Park and Heritage Center in Hazlehurst, Georgia.  Mother nature was wonderful to 28 GBA professional cook teams as they battled it out for the best in pork loin, pulled pork and pork ribs.  The RV park/campground is a comfortable location for the teams, large enough to accommodate cooking rigs but intimate enough to enjoy fellowship among competitors.  I give thanks for all the friendships we (Smokin J’s Barbeque) have acquired through the Georgia Barbecue Association.     Relocating….and living in a camper?

    My husband and I will be relocating to South Carolina, just outside of Greenville.  Meanwhile, we are living out of our barbecue competition trailer.  My kitchen is tiny. It has been difficult to plan meals, like I am accustom to, in such a reduced amount of space.  I have 3 burners and my pans are too large to use multiple burners simultaneously, making spaghetti proved to be a challenge. My crock pot will become my best friend.  Tonight, it is my husband, Doug’s chili recipe – of which he won a chili cook off competition – this chili has CANNED beans – LOTS of CANNED beans – we feel good…
